What you would do is make fixed maps like the level 6 maps, then look for bits that would be interesting if cut up and remixed together. treasure, curio), then small cells (I would make them 4-9 rooms big usually), then at the scale of a full map. To make an interesting, chaotic map system you want it ordered, at minimum, at three different scales. They are ordered at the scale of rooms, and that's about it. Chaos, by contrast, is a complex interweave of order and disorder. It is thus boring: you grok it after a couple seconds. Or, equivalently, it is random at every scale.
